A milestone...

Charlie is eating! He actually has been for a little over a month now and he's a great eater! So far he's tried (in roughly this order): banana, oatmeal, apple, sweet potato, avocado, and squash. This week we'll try some green veggies and carrots.

He wasn't super crazy about the avocado, but everything else he's gobbled right up! He also loves any kind of cracker or bread he can get his hands on (a boy after his mama's heart :). The other day I made him some graham crackers, and boy did he go to town!

This weekend I let him try a few of Jack's cheerios, and he mostly had fun playing with them. His pincer grasp isn't quite perfected, but he did get a few into his mouth.

Sunday morning I took advantage of the early hours before Daddy and Jack woke up to take some video of Charlie babbling... enjoy!

What's for dinner tonight? (times three)

Several of the blogs I regularly (religiously) read include little segments on recipes, etc. Since I am a frustrated chef (I love to cook) I thought it'd be fun to do a post on what we're eating this week. When I cook I have several criteria I try to meet:

* I try to use inexpensive ingredients

* I buy ingredients that can be used for multiple recipes

* I try to make healthy substitutions for recipes we love

* One new goal is to make things that can easily be transformed into meals for Jack, now that he is beginning to eat some "real people food"

So, yesterday I was cooking dinner for Mike to take to his brother's house so they could hang out. I made Cheesy Chicken Casserole, which is a favorite in our house, and simply split it into two separate small casserole dishes so that Mike could take one and I could eat from one/ we'd have leftovers here. Our chicken was frozen, so I decided to give a go at making my own chicken stock since we were in a hurry and I knew I'd need to boil the chicken. Usually I'd cook it in the crock pot. Here are my "recipes" for the casserole and the stock. Note: I use the word recipe loosely, as I rarely do the same thing twice.

Homemade Chicken Stock

You'll need:DSC01236

4 lbs frozen chicken

1 bag frozen mixed veggies (fresh veggies are better, but we were on a schedule)

1/2 an onion, chopped

1 tbsp minced garlic

1 tbsp olive oil

salt and pepper

water

In a large stock pot, saute the onion and garlic in olive oil. Add frozen chicken and veggies, and cover with water. Cover the stockpot, bringing to a boil. Reduce heat and simmer for however long you have. The longer it sits, the better! Strain in to a pitcher- mine made about a gallon. Set aside veggies and chicken for later use. Taste stock, adding salt and pepper if needed. If the taste isn't strong enough for you (especially if you're taking the quick route like me) place it back in the stock pot and boil it down to concentrate the flavor. Pour into individual containers and freeze for later use!

Cheesy Chicken Casserole

You'll need:DSC01235

2 lbs cooked chicken from above, cubed and seasoned

1/2 the frozen veggies from above

1 can cream of mushroom, celery or chicken soup

1 can cheese soup

1/2 bag Baked Nacho Cheese Doritos

shredded cheese

In the bottom of a 9x13 dish place a layer of crushed Doritos. Place cubed chicken and cooked veggies on top. Pour cream of mushroom (or whatever) and cheese soups on top, spreading evenly. Bake at 350 degrees for 20 minutes. Put another layer of crushed Doritos on top and top with a handful of shredded cheese. Bake for 5 more minutes, until cheese is melted. And to quote Rachel Ray... "yum-o!"

So, while I was in a cooking mood, I decided to make a greek pasta dish I've been wanting to make. I had it at Zio's not too long ago, and I loved it! I didn't love paying almost $9 for it, though, so I wanted to give it a go at home. I found a recipe to duplicate it here and I made a few changes.

(Imitation) Zio's Greek Pasta

You'll need:DSC01237

1-2 lbs cooked chicken from above, cubed

1/2 of the remaining mixed veggies from above

1 lb whole wheat penne pasta (whole wheat pasta is awesome for you and tastes the same at "white" pasta- try it!)

6 oz feta cheese

1 tomato, diced

1/4 c olive oil

2 tbsp minced garlic

6 oz kalamata olives, pitted and sliced

3 strips turkey bacon

seasoning mix:

2 parts: oregano, salt, onion powder, garlic powder

1 part: cornstarch, black pepper, parsley, paprika

1/2 part: cinnamon, nutmeg, thyme

A note about the ingredients...

* The veggies have nothing to do with greek pasta, and might seem a little weird. I use them as a filler and it gives the bonus of extra vitamins and good stuff.

* Kalamata olives break my rule of buying cheap- but in my opinion are worth it. They are also kind of a pain in that they usually have pits. For a cheaper, easier alternative you can buy sliced black olives.

* Originally my thought was to use pancetta instead of bacon (again, neither having to do with greek food, but yummy sounding to me). But pancetta is more expensive and turkey bacon is better for you...

Cook pasta and drain. Saute garlic, olives, mixed veggies, and tomatoes in a little the olive oil. Cut bacon in small strips and saute with veggies. Toss in the chicken and season with half of the seasoning mix. Mix chicken/veggie mixture with pasta in a large bowl then add in the feta cheese. Serve hot or cold (like a greek pasta salad).

The remaining veggies and tiny pieces of chicken I saved to refrigerate for Jack. Here he is enjoying it- along with a messy, messy biter biscuit.

Unnecessary Distraction

Mike and I have realized that it's been about nine months since we have been able to eat dinner at the same time.

Since Jack is big enough to sit in a high chair at the table now, and has been for some time, we decided to get a portable booster seat to take with us when we go out to eat. Sitting in restaurant high chairs (ick) is ok other than the cleanliness factor, but now that he's starting to eat some finger foods, the idea of him eating off the restaurant table (double ick) is more than I can stomach. Yes, I'm one of those people who doesn't let her silverware touch the table. Mike's request was that the booster have a tray, and this is the one I found:

Pretty cool... the toys are on a separate tray that snaps into the eating tray- all of which is dishwasher safe. The advertising says it entertains baby while you prepare food... or in our case so we can eat our meal at the same time. The toys being attached are a big plus, too, since Jack's current favorite game is throw/ knock everything from the tray onto the floor. Fine for home- not so much fine for restaurants.

Don't get me wrong, this is the kind of thing that before I had kids I would have laughed at. I used to think, people will buy ANYTHING not to have to deal with their children. Just stick the kid in a regular old high chair and give him a wooden spoon to play with. Better yet, hold your baby! He's throwing his toys on the floor? Don't let him! Well the me before kids didn't know what it was like to eat cold meals more often than not...

No, Jack doesn't need these unnecessary distractions. And yes, I'm usually perfectly happy to entertain him while we eat. In addition, as he gets older he's even beginning to entertain himself and participate in some parts of the meal. But, he's enjoying his new seat, all the same!

Back in Missouri

... and back among the living! I am feeling a ton better, although it took me a lot longer than I thought it should have. Jack, however, is still nursing his cold. He is Cranky with a capital "C" and just generally miserable. He was actually ok on the plane ride back thanks to a well-planned nursing schedule. His ears really bother him on the descent, so I have to try to hold him off eating until we're landing, which can be tricky timing-wise. Here's hoping he's feeling better soon and back to his happy self! I am going to get him weighed at breastfeeding support group tomorrow night because he hasn't really wanted to eat, and my milk supply has been down because of the fever. Not that he can't afford to slow down some, but I just want to be sure he's ok!

Yesterday we went over to Allison and Kenny's for breakfast and to see Kennison and Colton. Allison's mom made Jack and Colton each a MU blanket and a KU blanket. You see, Kenny and Mike are big MU fans... Dale, Allison's dad, is a big KU fan. Well, Jack likes them both, and donned his KU blanket all day yesterday, cheering the Jayhawks on to their Final 4 victory. But I'm partial to the KU blanket. Why, you ask? Yesterday Jack took at 2 hour nap with it, and today, he took a 1 1/2 hour nap with it! For a kid who never naps, that is HUGE! Thanks Nana Shelley for such a GREAT Easter present! After hanging out and relaxing all day, Kenny and Allison and crew came over to watch the basketball game, and Kennison practiced taking my picture with our old camera. I got her first, though! Today we just lounged around all day... we didn't make it to church but we did make it out this evening with Grandma, Grandpa and Uncle Dave for their wedding anniversary/Grandma's birthday. After a relaxing weekend, we're looking forward to a great week!

My favorite time

One of my favorite times a day is hanging out with Jack just before he falls asleep or right when he wakes up. I love the sleepy smile, they way he lets me cuddle him, and sitting together quietly. And he certainly has a lot to say! Check out the video.

We had started rice cereal last week, but that didn't go over so well... I think the rice was a little too much for his tummy, which has never had to digest anything more than breastmilk, to handle. So, we stopped after three days, let his system reach equilibrium, and tried again this week with baby oatmeal. What a difference! So far, he LOVES oatmeal way more than he ever did rice, and we haven't had the tummy issues (and hopefully won't)! I like doing the cereal for "lunch" because it's helping us establish a mid-day long nap routine. Today he slept for almost two hours!

I've written before about our attempt to get Jack attached to a lovie so he can begin to learn to self-soothe... I think we've succeeded! His new favorite thing is to pull it up over his face just before he drifts off. So, I'm constantly checking on him during naps and at night to make sure I can at least see his nose!

Jack is an eater!

Today we officially started Jack on solids- well, if you can call really diluted rice cereal solids. He did a good job- although most of it ended up on his bib. Here are a few pictures from the experience.

After eating (and cleaning up) Jack took a 90 minute nap on my bed. I propped him up because he is still a little congested (don't worry, I kept a close eye on him).
